About Our Ingredients
Our ice cream is made the old school way: Without stabilizers or artificial ingredients. We start with high quality organic dairy and then combine it with organic eggs and organic sugar. We believe that sourcing ingredients locally should be the standard these days – not the exception. Here in New Mexico, our local ingredients also happen to be the highest quality we can find. We are ingredient and community driven, finding inspiration for our seasonal flavors from the offerings of small, local farmers.

Joel Coleman
Chef Joel Coleman fell in love with the idea of opening an ice cream shop while he was chef/owner of Fire & Hops. He has since left that business and is now all in on La Lecheria. A Santa Fe native, Joel's culinary ingenuity ranges from his time at tables and kitchens across the world -- from San Francisco, Hawaii, Portland, and Santa Fe, to his international adventures. Joel can be caught on Saturday mornings at the Santa Fe Farmers Market, where he finds inspiration and community by supporting local agriculture. When he’s not cracking jokes in the kitchen, he values time with his family, travel, and of course, geeking out over new ice cream flavors.
